Blueberry Flapjacks
How to Create Blueberry Flapjacks – Comprehensive Directions

Step One
Preheat the oven to 180 degrees C (fan-assisted) and ready a baking tin by greasing or lining it.
My tin measures 10 x 8, resulting in my flapjacks being quite thin.
Step Two
Combine the oats, blueberries, and lemon zest in a substantial mixing bowl.
Step Three
Gently melt the butter, sugar, and syrup in a small saucepan over low heat on the stove, stirring continuously until the butter is fully melted.
Avoid boiling, and stir around the edges to keep the mixture from sticking to the bottom of the saucepan.
Step Four
Pour this mixture into the oats.
Step Five
Mix thoroughly, ensuring the oats are evenly coated. Dig deep into the bowl to verify all of the oats are moist.
Step Six
Transfer to the prepared tin.
Step Seven
Press down and to the edges with the back of a spoon until the oats are dense and the surface is flat.
I personally prefer using my fingers for this step. It can be a bit messy, but I find it simpler to achieve an even result this way.
At this stage, I also rearrange some blueberries if there are any large clusters or completely empty areas.
Step Eight
Bake for 30 minutes until the surface is golden brown.
This process might extend by five minutes if your flapjacks are thicker than mine.
Step Nine
Allow to cool completely in the tin before slicing into bars or squares.
If you’re pressed for time, cautiously remove it from the tin and let it cool on a wire rack or in the refrigerator for a short period.
Be careful when peeling the baking paper away.
