How to Create Maltesers Rocky Road – Detailed Guide

Step One
Chop the chocolate and set it aside. While this isn’t strictly required, it aids in the chocolate melting more swiftly and minimizes the chance of any splitting. It may take some time, but I believe it’s beneficial.
Step Two
Grease and line a cake pan. I highly suggest both for the effortless removal of your Maltesers refrigerator cake.
Step Three
Combine the margarine and golden syrup in a saucepan and gently heat over medium flame on the stove.
Step Four
Mix until the butter has fully melted and the blend is warm.
Step Five
Take it off the heat.
Step Six
Introduce the chocolate in 3 or 4 portions, stirring continuously until completely melted before adding the next. This process takes time, but remain patient.
If your chocolate ceases to melt, place it back on a very low heat until it does.
Step Seven
Allow it to cool for a minimum of 10 minutes, ensuring the mixture is cool yet pourable. Stir from time to time.
It should be cool enough to prevent melting the Maltesers or marshmallows.
Step Eight
While you wait, break the biscuits into a mixing bowl, resulting in uneven chunks. You can utilize a rolling pin to crush them; I used to do this, but breaking them with your hands allows for better control over the chunk sizes and doesn’t take long.
Step Nine
Incorporate the marshmallows, along with most of the Maltesers, keeping a handful for topping. If you’re using fewer Maltesers, I’d add them all in now.
Step Ten
Pour in about 3/4s of the chocolate mixture.
Step Eleven
Mix thoroughly, ensuring you really dig down to the bottom until the biscuits, marshmallows, and Maltesers are enveloped in chocolate.
Step Twelve
Pour into the prepared tin and use a spatula to press down and smooth out.
Step Thirteen
Pour the remaining melted chocolate on top and spread it out evenly.
Step Fourteen
Press in the leftover Maltesers.
Step Fifteen
Refrigerate for a minimum of 5 hours.
Step Sixteen
Gently remove it from the tin and peel off the paper before cutting it into individual servings.
