This Apple Traybake is zesty, moist, and overflowing with delectable flavor. It’s an incredibly simple recipe for a delightful fall dessert that’s ideal for apple enthusiasts.

I’m a fan of summer. I’m not among those individuals that adore autumn.

Although I can value the attractive hues, the anticipation of Christmas, and the children returning to school, I despise feeling cold. I consistently catch a dreadful cold in September, making life considerably more challenging.

However, I do enjoy apples and desserts with apple flavors that are perfect for the autumn season. A spiced apple traybake is soothing, warming, and scrumptious.

You can even present it warm for genuine comfort food.

What Makes This Apple Traybake Cake So Exceptional?

This apple tray bake is among my preferred cake recipes. It’s ideal because:

  • The instructions are straightforward.

  • They also ensure it’s incredibly moist.
  • You can omit the cinnamon if that’s your preference.
  • You might include other spices, like nutmeg, as well.

What is a Dorset Apple Cake?

A Dorset apple cake is merely a regional version of apple cake. This may be a Dorset Apple Traybake, but I’m not an authentic chef. I typically just mix things, so I apologize if this isn’t a Spiced Dorset Apple Cake!

Ingredients for this Apple Traybake Recipe

You can find the complete amounts in the recipe card at the end of this post, but when I prepare apple traybake, I use:

Cooking Apples

Lemon Juice– This is simply to prevent the apples from browning while you mix the cake batter. You can utilize fresh or bottled.

Margarine– Unsalted butter works well too. Just ensure it’s at room temperature.

Light Brown Soft Sugar– Golden caster sugar is acceptable as well. Muscovado sugar is another alternative, but I’ve never tested it.

Eggs

Vanilla Extract

Milk– Semi-skimmed or whole milk, depending on what you usually have.

Self Raising Flour

Baking Powder– I don’t typically utilize baking powder with self-raising flour, but apple slices are dense, so I find the batter requires a little lift.

Cinnamon

Demerara Sugar

I use a large bowl, a hand or electric whisk, and a brownie pan lined with reusable baking paper.

My brownie pan measures around 10 inches by 8 inches, and this recipe yields a fairly thick cake. You can utilize any deep baking tin, but if your cake is thinner, you’ll need to lessen the baking time to make up for it.

Is This an Apple and Cinnamon Traybake?

Yes, mine is an apple and cinnamon traybake. However, you can skip the cinnamon if you prefer an unspiced apple sponge tray bake.

What Type of Apples

Should You Utilize?

I prefer Bramley apples for my simple apple traybake, which are large and possess a more pronounced taste. They are ideal for baking.

Any apples that are slightly tart would be suitable. Granny Smith varieties work well, but I wouldn’t select something excessively sweet, as they may lose their flavor during baking.

How to Prepare Apple Traybake – Step-by-Step Guide

Apple traybake cake is incredibly simple to prepare. You can find the complete directions and measurements in the recipe card at the end of this article.

Step One – Get the Apples Ready

Peel, core, and cut the apples thinly. I usually cut them into eighths and slice those into 4 to 5 thin sections.

Put these slices in a bowl and coat generously with lemon juice to prevent browning.

Step Two – Prepare the Baking Dish

I line my baking dish with reusable paper. You may grease it with butter or margarine if that is your preference.

Step Three

Preheat your oven to 160 degrees C (fan-assisted, 180 if not).

Step Four

In a large mixing bowl, whisk together the margarine or butter and brown sugar until smooth.

I use either a hand whisk or an electric one, and it only takes about a minute.

Step Five

Incorporate the eggs, vanilla, and milk, then whisk thoroughly.

It may separate slightly, but don’t fret. It comes together again when you add the flour.

Step Six

Blend in the flour, baking powder, and cinnamon until smooth, being careful not to overmix. Stop as soon as there are no lumps.

Step Seven

Pour half of the batter into the prepared baking dish and spread it out evenly.

Step Eight

Layer on a thin layer of apple slices.

Step Nine

Pour the remaining batter over and ensure it’s evenly spread.

Step Ten

Top with another thin layer of apples and sprinkle with demerara sugar.

Step Eleven

Bake in the oven for 40-45 minutes, until the top becomes golden brown and a skewer inserted in the center comes out clean.

Step Twelve

Allow to cool completely in the dish before inverting and slicing.

Will the Apples Sink?

They may sink a bit. Everything tends to do that. That’s the reason we layer them twice. However, provided you slice them thinly, avoid overlapping, and use baking powder in the batter, you shouldn’t end up with a layer of apples at the bottom and none elsewhere.

If they do happen to sink, flip it over and call it an upside-down apple cake.

Decorating Apple Traybake

I do not adorn my apple cake at all. The apple slices atop look lovely, so I don’t think any embellishment is necessary.

If you enjoy a toffee apple traybake, consider a drizzle of toffee sauce.

What to Pair with Apple Cake

You can serve pieces of apple traybake alone. It is quite delightful warm with a scoop of vanilla ice cream, however. Enjoying apple traybake warm with ice cream is a real pleasure.

My daughter prefers it with custard.
