I usually select either lamb rump or lamb leg steaks when making stir fry. I cut my steaks into thin strips and discard any excess fat.

Lamb Stir Fry Instructions – Step-by-Step

Step One – Make the Sauce
Combine the sauce components in a jug or bowl and whisk well. Set aside until required.
Step Two – Prepare the Vegetables
The baby corn and mangetout may only need rinsing. Slice the onions and peppers; I prefer to julienne my carrots with a peeler, but you can also cut them into matchsticks.
Set aside until needed.
Step Three – Prepare the Meat
If you are utilizing lamb steaks, trim any thicker fat and slice the lamb into slender strips.
Transfer to a bowl and season generously with salt and pepper.
Step Four
Heat a large frying pan or wok over medium heat on the stove and generously mist with cooking spray.
Step Five
Introduce the lamb and sauté for 5 minutes, stirring frequently, until the meat is browned.
Step Six
Incorporate the vegetables and stir fry for an additional 5 minutes, until they begin to soften.
Step Seven
Whisk the sauce to ensure no cornflour or garlic has settled at the bottom and pour it into the pan with the meat and vegetables.
Step Eight
When the sauce begins to simmer, reduce the heat and stir frequently for 10 minutes, or until the sauce has thickened to a syrupy texture, coating the meat and veggies well.
Step Nine
Add the straight-to-wok noodles (if you use different noodles, adhere to the packet instructions), stir thoroughly, ensuring they are coated in sauce, and cook for approximately 3 minutes (or for the time stated on the package), stirring often until the noodles are done.
Step Ten
Serve directly from the pan.
If you are utilizing a frying pan, as I do, it might be simpler to work with 2 pans or to cook in 2 portions.
