I usually select either lamb rump or lamb leg steaks when making stir fry. I cut my steaks into thin strips and discard any excess fat.

Incorporate the vegetables and stir fry for an additional 5 minutes, until they begin to soften.

Step Seven

Whisk the sauce to ensure no cornflour or garlic has settled at the bottom and pour it into the pan with the meat and vegetables.

Step Eight

When the sauce begins to simmer, reduce the heat and stir frequently for 10 minutes, or until the sauce has thickened to a syrupy texture, coating the meat and veggies well.

Step Nine

Add the straight-to-wok noodles (if you use different noodles, adhere to the packet instructions), stir thoroughly, ensuring they are coated in sauce, and cook for approximately 3 minutes (or for the time stated on the package), stirring often until the noodles are done.

Step Ten

Serve directly from the pan.

If you are utilizing a frying pan, as I do, it might be simpler to work with 2 pans or to cook in 2 portions.
