Step One

In a large mixing bowl, beat the oil, eggs, sugar, and vanilla at medium speed for 3 minutes until the hue has brightened and the blend has thickened. If whisking manually, this process will take longer.

Step Two

In a separate bowl, combine the flour, baking soda, and spices.

Step Three

Pour them into the oil mixture.

Step Four

Whisk together until uniform.

Incorporate the grated carrots.

Gently mix in the raisins and nuts.

Preheat the air fryer to 170 degrees C and set the timer for 40 minutes.

Distribute the mixture evenly into two 6-inch pans that fit your air fryer. Grease them beforehand if necessary.

Carefully place the first cake into the preheated air fryer basket atop the tray and air fry for 20 minutes.
