- 1 tbsp Fine salt
- 1 tsp Coarse salt
- 2 tbsp Fresh herbs thyme or marjoram
- 3-4 cups All purpose flour or as required
- 1 Egg for egg wash

To create carrot puree, begin by peeling and slicing or grating carrots, then add them to a small pot with sufficient water to cover. Cook until tender, let cool, strain, and blend into a puree.

Using a stand mixer fitted with a dough hook, or a large mixing bowl with a wooden spoon, combine the yeast, sugar, and water, allowing the mixture to rest for 5 minutes to activate the yeast.

Incorporate the carrot puree into the yeast mixture along with room-temperature milk, olive oil, and fine salt. Whisk until thoroughly combined. Gradually add one cup of flour at a time until the dough becomes manageable and not sticky to touch. Move the dough to a lightly floured surface and knead gently, folding the underside over the top and applying pressure; repeat until the dough turns soft and flexible.

Transfer the dough to an oiled bowl, cover, and place it in a warm area for about an hour, allowing it to double in bulk.
