I cannot emphasize how simple these are to prepare. The filling can be prepared a day ahead, or if you’re like me, I often make large batches when I’m inspired to cook, then freeze them in portioned bags.

Season 1 Episode 3 The Great American Recipe on PBS, is when my secret was disclosed! The judges adored my Cunning Stuffed Shells and now my grandkids are in the loop about grandma!

My Cunning Stuffed Shells On PBS!

  • Large pot

  • Slotted spoon

  • Baking dish

  • 1 Large Onion finely chopped
  • 2 lbs Ground beef or Turkey or 2 cups cooked French lentils
  • 1 tbsp Olive oil
  • 2 tsp Salt
  • pinch Cayenne pepper or 1 fresh chili pepper
  • 2 Garlic cloves crushed
  • 1/4 cup Fresh Oregano

    or 2 tbsp dehydrated

  • 2 cups Zucchini shredded
  • 2 24-oz Tomato sauce containers or cans
  • 1 cup Shredded cheese more if desired
  • 24 oz Large Pasta Shells 2 packages
  • Sauté onions in olive oil. Incorporate ground meat (or lentils). Stir and cook until the majority of the pink hue fades.Introduce spices, zucchini, and tomato sauce. Simmer until the sauce thickens, approximately 20 minutes. Then allow to cool.
  • In the meantime, prepare the shells as per instructions.Rinse with cold water to halt cooking, arrange the shells on a tray or parchment paper, and let drain.
  • Stuff as much filling as possible into the shells.Arrange the shells in a baking dish and generously distribute cheese on the top of each layer.
  • When prepared to serve, simply place in a 325-degree oven, covered with foil or a lid, for around 15 – 20 minutes until the cheese has melted.

This recipe can be prepped and subsequently frozen. Utilizing small disposable baking trays simplifies the process of freezing the stuffed shells, reheating, and minimizes cleanup.
