Cheeseburger Muffins – Step by Step
Cheeseburger Muffins are an ideal snack or portable lunch, packed with grass-fed beef, sharp cheddar, smoked jalapeño, tomato, and pickles!
Cheeseburger Enthusiasm
Ah, the mere idea of a cheeseburger, particularly a homemade variation with all your favorite flavors included!
Were you aware that Cheeseburger is ranked second among America’s most cherished foods?
Yet, at times the effort of crafting your own burgers propels you straight to your nearest burger establishment instead.
The grilling, the clutter, the bun… If you are like me, you’ve realized that the finest buns for your burger are Homemade Burger Buns.
So, now you need to let the bread ascend too?
Nope, not any longer! All the elements we adore about a cheeseburger can be baked into a muffin topped with a mini cheeseburger, pickles, and tomatoes as well!
A Muffin for the Guys!
My sister’s husband Nathan admires his burgers! Like, truly adores them.
Thus, knowing that I would be visiting them, I opted to experiment and create a cheeseburger he could enjoy anytime, provided my sister prepared a batch in advance and kept them available.
I asked about all the toppings. His favorite includes cheddar cheese, tomatoes, perhaps a drizzle of ketchup, and naturally, a pickle!
Naturally, the concept has already been developed by me, allowing you to personalize your burger muffin to your preference!
The Cheeseburger Muffin
I have come to the conclusion that anything can be transformed into a muffin.
So much so that I launched a muffin cookbook devoted to my children, in honor of every crazy and whimsical muffin I’ve ever crafted!
I once witnessed a culinary competition, one of those spanning three months.
A contestant participated declaring that “A sandwich encompasses everything and everything can be a sandwich.” He triumphed!
Fast forward a decade, and I am telling you that the same holds true for a muffin.
The wonderful aspect of that, which isn’t always true of a sandwich, is that they can accompany you everywhere.
Another fantastic feature, unlike a sandwich, is that you can prepare numerous to store in the refrigerator for several days or freeze for months.
Imagine how splendid a meal you could savor on a lengthy airplane journey if you had your own Homemade Airplane Food, and made it a cheeseburger too!
How To Create Cheeseburger Muffins – Step by Step
For the base of the muffin, I aimed for a flavor resembling a bun as closely as possible.
- Step 1 – Eggs, milk, flour, a quick rising agent, but I wanted a good portion of the burger ingredients to blend into the batter as well.
I caramelized an onion. Delicious. The brown edges of the onion were already making this burger muffin come alive.
- Step 2 – A third of the ground beef was added to the onions, sautéed until it achieved a golden hue, then removed to cool briefly before being mixed with the egg and flour blend. Minced garlic, cheese, and a dash of smoked Jalapeño powder were included. Now we’re on the right track!
- Step 3 – Then, my playful imagination sparked; I’m going to create tiny burgers to protrude from the center of the muffin, enticing the burger aficionados to my muffin.
- Step 4 – Everything else collaborated seamlessly; tomatoes, both nestled in the muffin and poking out. Naturally, there had to be a pickle, but I waited until the muffins were baked; fresh from the oven, still soft and warm, I inserted the pickle to stand upright as well.

Hot off the press this year: My Muffin Madness Cookbook!
-
muffin tin and liners
-
Sauté pan
- 1 Onion finely sliced into strips
- 1 tbsp
Margarine
- 1 lb Minced beef
- 1 tsp Extra virgin olive oil
- 1/3 cup Panko breadcrumbs or crushed biscuits
- 2 Garlic bulbs mashed
- 1 tbsp Tomato sauce
- pinch Smoky jalapeño spice
- 2 Chicken eggs
- 1 cup Dairy
- 2 cups Universal Flour
- 1/2 tsp Seasoning
- pinch Pepper
- 2 tsp Leavening agent
- 1 tsp Sodium bicarbonate
- 3/4 cup Cheddar shredded, additional for garnish
- 12 Cherry tomatoes halved
- 3 Petite pickles optional
-
In a frying pan, melt the margarine and sauté the onions until golden. After the onions have caramelized, take out 1/4 of them. These will be used as a topping on the muffins prior to baking.
-
Add the extra virgin olive oil to the pan along with the leftover onions, sprinkle in the jalapeño spice and 1 cup of minced beef. Cook until the beef is fully browned. Remove and place in a bowl.
-
In a separate medium mixing bowl, combine the remaining raw minced beef, mashed garlic, panko breadcrumbs or crushed biscuits, seasoning to taste, and tomato sauce. Stir thoroughly. Spread on parchment paper and flatten to approximately a quarter inch thick, shaping 12 mini burgers using a biscuit cutter.
-
Use the same frying pan to quickly cook the mini burgers on both sides until browned. It’s okay if the insides aren’t fully cooked as they will bake in the muffins.
-
Preheat the oven to 350 degrees. Arrange muffin baking cups in a muffin tray. Lightly coat each cup with non-stick spray.
-
In a large bowl, whisk together the eggs and dairy until well combined. Incorporate the flour, seasoning, leavening agent, and sodium bicarbonate and whisk until the mixture is smooth. Fold in the cooked minced beef combined with the set-aside onions, then mix in the cheese. The mixture will be thick.
-
Evenly distribute the mixture into the prepped baking cups. Position one mini burger in the center of each muffin, alongside a half cherry tomato. Top with a sprinkle of additional cheese.
-
Bake until a toothpick comes out clean, approximately 30 minutes for large tins, and 25 minutes for standard sizes.
-
Take out of the oven and, while still warm, insert the sliced pickle in the center, allowing it to protrude. Allow to cool slightly, then serve. Excellent at room temperature as well.
-
Will remain fresh for about 3 days in the refrigerator. Enjoy cold or heat in the microwave for approximately 20 seconds.
