Strawberry Cheesecake Bites are Divine and Irresistible

These divine little cheesecake bites are incredibly tasty. Creamy, indulgent, strawberry-infused cheesecake enveloped in rich, dark chocolate—is there anything more tempting?

You’ll be pleased this recipe yields only six delectable bites because you won’t be able to cease indulging until they disappear. Naturally, you can always double (or triple) the recipe, but don’t say I didn’t forewarn you.

Strawberry Cheesecake Bites Dipped in Chocolate

Just for fun, I prepared a batch of these cheesecake bites coated in dark chocolate, and another with white chocolate adorned with shimmering sprinkles. These would serve as a fantastic Valentine’s Day dessert, or a sweet treat for any romantic event or date night.

The Ideal Date Night Dessert

The recipe suggests utilizing an ice cube tray to shape the outer chocolate shell. I employed a silicone ice cube tray, which made it exceptionally easy to extract the bites.

If you use a hard ice cube tray, just ensure it has rounded corners, or it will be challenging to remove the bites without damaging them.

Chocolate Dipped Strawberry Cheesecake Bites

These delightful creations merge numerous delightful desserts
into a single sweet little handheld treat. A decadent, strawberry-infused cheesecake core is wrapped in dark chocolate for a dessert that appears as if it originated from an upscale chocolate boutique. This recipe is derived from my new cookbook, Dessert Cooking for Two.

  • 1. Prepare the chocolate cups. In a medium, microwave-safe bowl, heat the chocolate in 30-second segments, stirring in between, until it is entirely melted and silky. Spoon a portion of the chocolate into each of 6 compartments of an ice cube tray (or chocolate molds or foil mini cupcake liners) and then tilt and rotate so that the chocolate coats the walls. Place in the freezer while you prepare the filling.

  • 2. Create the filling. In a medium bowl, mix the cream cheese, powdered sugar, and vanilla and beat until smooth. Add
    the cream and continue to beat to combine. Gently fold in the strawberries.

  • 3. Construct the bites. Fill each ice cube nearly to the top with the
    filling. Add more chocolate on top to encase the filling. Freeze until firm, approximately 20 minutes, or place in the refrigerator for 1 hour.

  • 4. Present. To serve, turn the ice cube tray upside down onto a plate. Allow the confections to rest at room temperature for about 10 minutes before serving. Store in the refrigerator or freezer.

1. A silicone ice cube tray performs the best as it facilitates easy release of the bites. If you are using a rigid ice cube tray, ensure it has rounded corners.
2. If your chocolate appears too thick to pour or to spread evenly in the mold, stir 2 teaspoons of coconut oil into the melted chocolate. This will thin the mixture without hindering its ability to solidify.
