Ingredients you will require
2 x 400g canned butter beans
1/2 cup parmesan cheese, grated
1/2 cup sundried tomatoes in oil, chopped
1 Tablespoon tomato paste
1/2 cup brown onion, finely chopped
1/2 cup half and half (single cream)
2 garlic cloves, finely chopped
2 Tablespoons unsalted butter
1/2 teaspoon red pepper flakes or adjust as desired
Salt and pepper to suit your taste
Fresh basil
2-3 cups baby spinach
Instructions for making Marry Me butter beans
In a skillet over medium-high heat, add unsalted butter and let it melt. Once it has melted, incorporate the chopped onion and garlic cloves, cooking them until they turn soft, translucent, and aromatic. Introduce the tomato paste, sundried tomatoes, red pepper flakes, salt, and black pepper.
Stir to integrate and cook for 2 minutes, stirring occasionally to prevent burning.
