Blue Cheese Dressing
I don’t always adore blue cheese, but I adore this blue cheese dressing. It’s an excellent introduction to blue cheese if you’ve been reluctant to sample it, and a sure favorite if you relish it. You can opt for mild cheese, as I prefer, or a more robust blue cheese for a stronger dressing.
This blue cheese dressing recipe is rich yet not overly heavy, pleasantly tangy, and tastes akin to the finest restaurant versions, thanks to the fresh chives and garlic. It’s comparable to my Easy Blue Cheese Dip, but prepared to drizzle over greens.
Salads are my forte, and my array of dressings felt lacking without this classic. It’s far superior to store-bought!

Sour Cream
Sour cream provides a creamy, tangy foundation for this dressing. No mayo required!
Crumbled Blue Cheese
The ideal blue cheese for dressing depends on your preferences. I favor a gentler blue cheese, such as Gorgonzola dolce or Danish Blue. Blue cheese enthusiasts may opt for a stronger cheese, like Roquefort. Typically, creamier blue cheese with less veining will have a milder flavor than hard, crumbly cheese with abundant marbling.
Buttermilk
Buttermilk adds extra tang and thins the dressing’s consistency. Use genuine buttermilk if possible, because the flavor enhancement is worthwhile (you can always whip up pancakes with the leftovers). Alternatively, substitute milk with an extra squeeze of lemon juice instead.
Lemon Juice
Fresh lemon imparts a zest that makes this dressing taste vibrant.
Chives and Garlic
Finely chopped chives and minced fresh garlic provide irresistible allium flavor. If you lack chives, green onions can be used instead (primarily the green parts).
