This leftover roast pork curry recipe isn’t authentic or traditional. However, it’s a dish my family enjoys, and easy family meals are my favorites.

But as long as you consume pork, there’s no reason not to curry pork.

How To Prepare Leftover Pork Curry

Ideally, for your prepared pork curry, you ought to marinate your pork in oil, turmeric, and a pinch of salt and pepper overnight. I typically keep it all in an airtight Tupperware container.

If overnight marination isn’t feasible, aim for a minimum of 2 hours.

After marinating, it simplifies to frying onions and garlic, adding ginger, chili, and the pork, followed by simmering with diced tomatoes, coconut milk, and various spices.

What If You Don’t Have Much Pork?

I usually purchase large cuts of meat or poultry, such as chicken, pork, lamb, or beef. This is because I appreciate being able to create two meals from it. I even aim to prepare a dish with any leftover roasted vegetables and potatoes.

When I create this curry using leftover pork, I strive to have around 400-500g of leftover pork, which I cut into smaller pieces.

If you possess less pork, you can still prepare this curry. Simply use whatever you have and ensure there’s plenty of delicious sauce for dipping bread, or incorporate some additional ingredients to enhance its volume.

You can include any leftover potatoes and vegetables at your disposal. Chop boiled or roasted potatoes into 1-2cm cubes and add them all 10 minutes before serving.

Another alternative is to include a can of drained butter or cannellini beans, which are excellent for enlarging meals, or add some lentils or chickpeas.

What You Require to Create Curry with Leftover Roast Pork

I prepare my leftover pork curry in my medium cast iron pan.

  • 2 Tablespoons Curry Spice

  • Put the chopped pork into a covered container.

  • Incorporate the oil, turmeric, and seasoning.

  • Mingle thoroughly, secure the lid on the container, and chill in the refrigerator for preferably overnight or a minimum of 2 hours.

  • When you are set to prepare the curry, heat the ghee in a sizable heatproof dish or skillet over moderate heat on the stove.

  • Add the onions and sauté for 3 minutes, stirring frequently.
