Today focuses on activity. I realize I discuss nutrition, recipes, and wholesome eating frequently, but there is much more to a healthy lifestyle than just nourishment. Movement and physical activity are just as vital. There are numerous reasons we should engage our bodies every day. One reason is that exercise invigorates the entire body, a mechanism that allows our blood to circulate to every single part of our being. Even the regions of our body that aren’t associated with blood flow, like our vertebrae, require motion to operate correctly. The additional cellular fluid surrounding our vertebrae requires movement to distribute nutrients evenly. Hence, a deficiency in exercise often manifests itself as back discomfort.

Naturally, there are many other motives to increase physical activity. Sports and movement in general elevate our spirits because they release endorphins. They also serve a meditative purpose, assisting us in becoming more relaxed, concentrated, and tranquil. For me, working out daily, or at least every alternate day, is a straightforward decision. It has been this way since childhood.

If you’ve been visiting this blog often, you may know I am a significant morning enthusiast regarding exercise. It’s quite peculiar, but I simply cannot – for the life of me – get out of bed after roughly 11 am. However, I have a plethora of friends who are entirely the opposite. If you ask them to rise at 6 am for a morning jog, they would burst out laughing.

Regardless of whether you are an early bird or a night owl when it comes to workouts, I have just the right recipe for you. An uncomplicated coconut chia pudding with Nergi kiwi. Yep. Those adorable little mini kiwis. I have always been a huge admirer of kiwis, but these new mini varieties are indeed something special. To be honest, hand me anything in miniature, and I will adore it forever. But from a nutrition standpoint, the Nergi kiwi perfectly enhances the chia pudding with its high Vitamin C level.
Recently, I’ve completely fallen for the Nergi Mini Kiwis. Call me eccentric, but I adore everything in small sizes. Mini muffins, mini cakes, mini kitchen gadgets … regardless of what it is, if it’s mini, it has to be mine. The wonderful aspect of the Nergi Kiwis is that you can consume the skin, making them essentially like eating berries. Or you can use them to adorn your overnight oats as you would with berries in the summer, without the need to peel the kiwis first.

Post-Workout Mini-Kiwi Overnight Oats

Ingredients

  • 100 g (gluten-free) oats
  • 375 ml (gluten-free) oat milk
  • 2 tablespoons of coconut yogurt or yogurt of your preference
  • 2 tablespoons of chia or ground flaxseed
  • ½ teaspoon cinnamon
  • 1 splash of fresh lemon juice
  • a bit of fresh vanilla (I use vanilla powder)
  • 30 g of chopped almonds

Instructions

  1. Combine all ingredients in a glass except for the kiwi and chopped almonds, stir and refrigerate covered overnight. Mix again the following morning
  2. For visually striking glasses, slice the Nergi kiwi and “adhere” them to the edges of the glasses. Then fill the glasses with the overnight oats, topping with coconut yogurt or yogurt of your choice, chopped almonds, and Nergi kiwis to taste.
