Step One

Warm the oil in a sizable, non-stick skillet over medium heat on the stove. 

You will need some pasta water in the sauce, so begin preparing the pasta concurrently, depending on the cooking duration indicated on the packet. 

Step Two

Incorporate the onions and sauté for 5 minutes, stirring frequently. Cook longer if you prefer them truly tender. 

Step Three

Introduce the chicken and sauté for 10 minutes until thoroughly cooked, stirring frequently. I typically just brown the exterior, as the interior finishes cooking while the sauce simmers, but there’s minimal simmering in this recipe, so I ensure the chicken is fully cooked before proceeding. Slice a larger piece open to confirm the center is done. 

Step Four

Mix in the chilli and garlic. If using fresh instead of puree, cook for 2-3 minutes before continuing. If using puree, simply stir it in and proceed. 

Step Five

Add the peppers and mix thoroughly. If you prefer your peppers very tender, sauté for a bit longer. 

Step Six

Incorporate the sweet chilli sauce and soft cheese. Cook until the soft cheese has melted and the sauce is uniform, stirring frequently. This will not take much time. 

Step Seven

Add a ladleful of pasta water and mix well. 

If it appears quite watery, simmer for 5-10 minutes. However, it shouldn’t be too much liquid, so it should be fine. 

Step Eight

Drain the pasta and combine it with the sauce. This is easier done with tongs. 

Step Nine

Utilize a food thermometer to ensure the chicken has reached 75 degrees Celsius, and serve.
