Hey folks, I have a secret to share. Until last week, I probably hadn’t enjoyed a smoothie for three months! Or perhaps even longer. I came to the realization that I need it to be warm and sunny outside to genuinely “experience” the smoothie atmosphere. I suppose this ties back to when I immersed myself in the smoothie culture while residing in North Carolina. It’s virtually always sunny there, which is why I made myself a smoothie daily for lunch during the final year of my bachelor’s. With the extreme temperatures and humidity prevalent in that region, sipping a nutrient-rich smoothie felt far more appealing to my sweat-soaked self than indulging in a hefty lunch most days. Naturally, I wouldn’t only have a smoothie for lunch, but the smoothie was the part I was most eager about.

However, I have come to realize over the years that I am truly a summer smoothie enthusiast and that I neglect my blender from October through March. Completely silly, I know, but since I am almost always cold (thanks to my blood pressure medication), I tend to favor warm meals and hot beverages during winter. I’m not suggesting this is a wise approach, it’s just how I feel.

Now that we are practically in summer here in Northern Germany this May, I am completely back in the smoothie routine. So back, you all. So back. For the last week, I have been craving blueberries, and I’ve been whipping up this blueberry zucchini smoothie each day. Yes, every day. And you will too, once you give it a shot!

This smoothie is filled with incredible benefits; I’m not sure where to start. Let’s do a quick overview:

  • Blueberries: an outstanding source of antioxidants, which safeguard your cells from harm, meaning: protect against UV rays, shield your skin from premature wrinkles and other aging signs. Incredible! Plus, the dark pigments in blueberries, known as anthocyanins, have been shown to protect the body against cancer!
  • Zucchini: Mainly included for bulk, but zucchinis are also loaded with minerals like magnesium and calcium.
  • Cucumber: primarily water combined with delightful enzymes.
  • Banana: rich in potassium, which is essential for healthy heart function.
  • Avocado: packed with heart-friendly fats, avocados rank among the top sources of healthy fats. They also serve as excellent nourishment for the skin!

Are you prepared for even more goodness?

  • Turmeric: This root is among the finest anti-inflammatory foods available. If possible, opt for the fresh root.
  • Spinach: one of the premier sources of Vitamin K, essential for bone strength! Spinach also offers a significant amount of iron, plenty of vitamin A (think eye health!), and folate, which is particularly crucial for expectant mothers and their babies.
  • Lemon: undoubtedly one of the best-known antioxidants. The vitamin C in lemon also aids in making the iron from spinach more absorbable.
  • Linseed oil: first and foremost, every vegetable-laden smoothie requires some form of fat for the absorption of fat-soluble vitamins (ADEK). Linseed oil is one of the top sources of omega-3 fatty acids, which combat inflammation and fortify cell membranes and the skin barrier. Omega-3 fatty acids are also vital for optimal brain function.

Ingredients

For the basic blueberry smoothie:

  • 130 g (1 cup) of blueberries
  • ½ banana
  • the juice of one lemon
  • ½ avocado
  • 60 g of zucchini (about ½ of a zucchini)
  • 130 g of cucumber (about a half a cucumber)
  • a small piece of turmeric
  • a handful of spinach
  • 1 tablespoon of almond butter or sunflower butter
  • 240 ml of coconut water

Additional powerful options:

  • a small piece of ginger
  • 1 teaspoon of linseed oil
  • 10 mint leaves
  • 5 basil leaves

Instructions

  1. Simply blend all ingredients in a high-powered blender until smooth.
