  • Garlic press
  • Citrus press

  • Large mixing bowl

  • 3-4 cups All Purpose Flour extra for dusting
  • 1 1/2 cups Water
  • 2 tsp Yeast
  • 1 tbsp Salt
  • 1/4 cup Grated hard cheese
  • 1 Asparagus bundle peeled and sliced in half long-ways
  • 1 cup Cherry tomatoes sliced in half
  • 1/2 cup Onion sliced thin
  • 2 Garlic cloves crushed
  • 1/2 cup Olives sliced
  • 1/4 cup Extra virgin olive oil
  • 1 tbsp Lemon extract
  • 1/2 cup Fresh basil leaves chiffonade cut
  • 1/2 lb Firm cheese, sliced or grated sliced or shredded
  • Pour the warm water into a sizable mixing bowl. Sprinkle the yeast and sugar on the surface. Allow it to rest for 5 minutes until a froth develops.

  • Add salt and a small amount of flour, then mix. Gradually incorporate flour and stir until it becomes hard to mix. Using your hands, start to push the newly added flour into the dough, flip it over, add more flour, and continue this process until the dough no longer feels sticky.
  • In a clean, lightly greased bowl, place the dough, cover it, and set in a cozy (not hot) spot until it doubles in volume, roughly one hour.

  • Preheat the oven to 400°F.

  • Flatten the risen dough on a floured surface and shape it onto the pizza pan or baking sheet. Let it rest while you prepare the toppings.

  • In a large bowl, combine the olive oil, lemon juice, and minced garlic. Toss the chopped onions and asparagus in the olive oil mixture.

  • Dip a basting brush into the oil at the bottom of the bowl and generously coat the top of the pizza dough and crust.

  • Distribute the onions and asparagus over the pizza, along with the tomatoes, olives, and roughly chopped herbs. Place the cheese slices on top.

  • Bake until the crust edges turn golden, about 18-20 minutes.
