Naturally, you can open a can or jar of store-bought tomato sauce for this shakshuka dish.
Or maybe during the summer season, you stored plenty of cherry or berry tomatoes and tucked them away in your freezer.
After all, those sweet, succulent tiny tomatoes aren’t ideal for sandwiches or slicing on a burger, but I have a great idea for those tiny gems.
With a quick sauté in a hot skillet, a few herbs, salt, and garlic, the flavors of those tiny tomatoes are enhanced.
Toss them into a food processor or blender, and in under ten minutes, you have a wonderful homemade tomato sauce!

- 2 cups cherry or berry tomatoes
- 1 cup fresh basil
- 2 garlic cloves
- 2 tbsp olive oil
- salt to taste
In a heated heavy skillet, roast these elements
together for 15-minutes, blend and completed!

- Chili pepper

- 2 tbsp Olive oil

1 Onion small, thinly sliced
- 1 Red bell pepper cut into long strips
- 1 Chili pepper finely chopped
- 15 oz Canned Tomatoes
- 1 Large Fresh Tomato sliced thinly
- 2 Garlic cloves mashed
- 1 tbsp Smoked paprika
- 1/2 tsp Salt or to taste
- 4 Eggs at room temperature
- 1/2 cup Fresh parsley coarsely chopped
- 1 oz Feta cheese optional
- 6 Olives sliced thin, optional

Drizzle olive oil into each skillet, over medium-high heat. Add onions, garlic, and peppers, and sauté until they start to caramelize and develop brown spots on the onion edges.

Incorporate spices, tomato sauce or pureed canned tomatoes along with fresh chopped tomatoes into each skillet and allow them to simmer for around 7 minutes or until the sauce thickens.

After thickening the sauce, use the back of a spoon to create a space in the center of each skillet. Gently pour the eggs into the opening, cover, and simmer on medium heat for approximately 5 minutes. Ensure a film has started to form over the eggs while keeping the yolk slightly jiggly.

Take off the heat, dust with chopped parsley and any additional toppings you may desire. Shakshuka is ready for serving!
