For a captivating star beneath the Christmas tree, there’s the cookie that invariably attracts attention, my Salted Caramel Filled Chestnut Sandwich Cookies. These star-shaped delights are sheer holiday elegance, the type of cookie that compels everyone to hesitate prior to indulging in that initial, luscious bite.

I have crafted chestnut butter cookies previously and frequently just dip one end in melted chocolate. Certainly, a chocolate-dipped cookie is festive enough on its own, but inserting salted caramel between two cookies made these the finest I’ve ever experienced!

Indeed, in Italy, there exists a celebration season for chestnuts that commences in October and continues through November.
If you are unfamiliar with this marvelous nut, you are in for a delight. Not only is the nut itself very substantial and somewhat tender, but it is also rich in nutrients.
It is believed that chestnuts are beneficial for digestive well-being and regulating blood sugar levels, as well as excellent for cognitive function and improved skin.
During the festive season, I require enhanced cognitive function (phew, tiresome)!
Salt Caramel
Whoever thought that coarse grains of sea salt and caramelized melted sugar should complement each other was Brilliant!
Indeed, it was a French pastry chef in the 70s who initially created the combination of caramel and sea salt.
For me, it was Julia Child and her straightforward recipes for caramel! Once caramel was initially crafted, something extraordinary occurred.
It was swiftly patented, and thereafter, Haagen Daz and Starbucks hopped on the bandwagon; Salt Caramel everything turned into a sensation.
Alternative Applications For Salt Caramel
Crafting Salt Caramel is incredibly simple. I prepare a batch every fall for Salt Caramel Apple season. Once the caramel is produced, it will last in the refrigerator for approximately a month.
While salt caramel tastes fantastic on desserts, such as those delightful Caramel Popcorn Balls we adore during Halloween.
Or a charming autumn Salt Caramel Apple Muffin, it becomes even more delicious when blended into chili or savory meat sauces!

Fleur de sel, literally translating to “flower of salt”, is the most exquisite and delicate of salts. Incorporating this fine salt into these salt caramel cookies will undoubtedly enhance their appeal, though a coarse sea salt will suffice as well.
Something you will frequently hear me mention when I’m creating a dessert recipe is the importance of adding salt to a sweet dish. Why? Because salt amplifies sweetness! It essentially enhances the flavor experience.

I am not certain who originally decided that Santa should have cookies and milk during his visit, but it quickly became a fun challenge to see who crafted the cookie that Santa cherished the most. (wink)

- 2 cups Unsalted Butter room temperature
- 3/4 cup Confectioners’ sugar
- 1 cup Mascarpone or cream cheese room temperature
- 1/4 cup Roasted chestnuts ground
- 1 tsp Salt
- 3 1/2 cups All-Purpose Flour additional for dusting
- 1/4 cup Salted Caramel homemade
- 2 oz Chocolate
Cookies

Combine butter and sugar in a mixer or food processor, or even mix by hand. Stir in the mascarpone, nuts, and salt. Gradually introduce the flour until the dough becomes workable by hand. Dust a little flour on a surface, roll the dough out, and cut out cookies. Don’t forget to create a window with a smaller cookie cutter in half the cookies so that each cookie bottom will fit beneath a top.

Bake at 325°F for around 13 minutes. Allow to cool.

Assemble cookies simply by spreading a little caramel at room temperature onto the bottom cookie and placing a windowed cookie on top.
