Recently Gathered Figs
Figs and garlic chives, harvested in August and September from my garden, inspired me to create the finest fig and garlic chive pizza in my kitchen this year!
This pizza is distinctive and a must-try for all Mediterranean flavors enthusiasts.
The blend of sweet figs, tangy feta, and savory garlic roasted zucchini rolls makes this pizza an anticipated treat every year during the fig harvest period.
An Exceptional Savory Fig Pizza
This pizza is exceptional in every aspect. It features freshly picked autumn treasures from my garden, a spread of mascarpone, crumbled feta, and honey drizzled on top.
Sliced fresh figs and rolled zucchini are placed over caramelized onions and sautéed ground meat, with lamb being my choice.

Garlic Chives Pair Beautifully With Figs On A Pizza
Having never cultivated garlic chives before, I made the decision to experiment with them way back in the spring.
I planted them, labeled them, and then lost track of them.
Nothing appeared to be happening underground.
Out of nowhere, at summer’s close, they sprouted and reached nearly two feet in height!
My son, a professional chef, was thrilled upon spotting them in my garden. “You know these are frequently utilized in Japanese cuisine”?
The taste resembles that of onion chives but also has a distinct garlic flavor. I felt compelled to create this recipe to showcase my new chives!
Figs In My Garden
If you tuned into The Great American Recipe on PBS this past summer, you’ll know that I participated and reached the finale.
The Fig Finale I devised, in case I progressed to the end, was a tribute to the abundance of every home I’ve resided in that had a fig tree.
From late August to September, I eagerly anticipate the harvest of plentiful figs. I created this recipe to combine the figs with my garlic chives on a delectable Mediterranean-inspired pizza.
An Exceptional Almond Pizza Crust
While you could employ any preferred pizza dough to craft this pizza, I developed a Distinct Almond Crust, with spelt and barley to complement the ingredients featured here.
As there’s no white flour in this crust, it has more texture compared to a standard bread-type crust.
It’s simple to roll out and bakes in under 18 minutes, providing a slight crunch to the crust’s edges.
More Figs?
Figs in my kitchen incorporate both the fruit and the foliage.
Although numerous recipes exist to prepare with ripe figs, only a handful of individuals appreciate the delight of Enveloping Fish in a fig leaf and baking them.
The fragrance resembles that of coconut when the leaves are being roasted.
Regarding the figs, well… a fresh Fig Jam, whether sweet or with chili peppers, serves wonderfully as both a spread or as an enhancement to a sauce.
And talking about a sauce, why not mix in a few roasted beets with the fig sauce and present them in an Endive Leaf with Fig Dressing!
Required Equipment
- Sauté pan
- Chopping board
- Chef’s knife
- Spreading knife
- Slotted spoon
- Pizza pan – or separate pizza pans, or a baking sheet can also work
- Vegetable peeler
- Rolling pin
- A fork – to drizzle honey
Necessary Ingredients
- Distinct Almond Pizza Crust Recipe
- Zucchini
- Fresh figs
- Onion
- Garlic
- Olive oil
- Ground lamb – or preferred meat
- Aleppo pepper
- Salt
- Garlic Chives
- Honey
- Feta
- Mascarpone
- Almond Pizza Crust homemade
- 1 Zucchini
- 12 Fresh Figs
- 1 Onion medium
- 2 Garlic cloves
- 1 tbsp Olive oil
- 1/2 lb Ground lamb
- 1/2 tsp Aleppo pepper
- 1 tsp Salt
- 1/4 cup Garlic Chives chopped
- 2 tbsp Honey
- 1/4 lb Feta
- 1/2 cup Mascarpone

Preheat the oven to 400°F

Using a vegetable peeler, cut the zucchini into long, slender strips. Roll them tightly and set aside.

Halve the figs lengthwise and set them aside.

Finely mince the onion and garlic. Drizzle olive oil in a skillet and caramelize the chopped onions along with the garlic. Once done, remove from the pan and set aside.

Sauté the ground lamb (or your choice of meat) in the same skillet until fully cooked, ensuring not to overdo it.

Flatten the pizza dough and situate it in the pizza skillet, or separate pizza skillets.

Apply a delicate coating of mascarpone on top of the pastry. Disperse the onion blend, followed by the meat blend. Arrange the rolled zucchini and sliced figs atop. Finely mince the garlic chives and scatter on top. Crumble the feta cheese and finish with a drizzle of honey.

Bake for 15-18 minutes. Cut into slices and present.
