Frozen spinach often contains too much moisture, resulting in excess liquid in the egg mixture.
I usually utilize fresh garden spinach leaves in the spring, when they flourish abundantly in pots, before it turns too hot.

With fresh spinach leaves, sheets of phyllo pastry, a bit of olive oil, and some cashew cheese, you can create a delectable vegan spanakopita!
