Jammy Joeys

Hello friends! I have a delightful little recipe to share with you today, Jammy Joeys. Soft vanilla sponge enveloped in delightful jam and then rolled in coconut flakes. The ideal little indulgence!

These tiny cakes are surprisingly hard to locate in stores. They are charming and perfect for the holiday season as they resemble tiny snowballs. They are airy and soft with just the right level of sweetness from the jam and the delicate layer of coconut.

They are quite an easy bake yet appear incredibly impressive. You can experiment with different jam flavors or even opt for a chocolate ganache or spread instead. They are quite similar to the Australian Lamingtons.

  • 8×8 Tin

  • Baking paper

  • Bowls

  • Chopping board

  • Knife

  • Weighing scales

  • Electric whisk

  • Palette knife

  • 300 grams Unsalted butter
  • 300 grams Caster Sugar
  • 300 grams Self-raising flour
  • Pinch of salt
  • 5 Eggs
  • 2 tbsp Milk
  • 1 tsp Vanilla Extract
  • 100 grams Jam Your preferred flavor
  • 100 grams Coconut flakes
  • Preheat the oven to 180C/160 C Fan. Grease and line your 8×8 square pan.

  • In a mixing bowl, cream together butter and sugar until it becomes pale and airy.

  • Add the eggs one at a time, mixing until fully incorporated.

  • Incorporate your vanilla, then gently fold in the sieved flour and salt.

  • Fold in your milk.

  • Spoon the batter into your cake tin and smooth it out. Bake for about 50-60 minutes or until a toothpick inserted comes out clean and the cake bounces back when gently pressed.

  • Allow to cool completely.

  • Once cooled, trim the top of your cake with a knife if necessary, then slice your cake in half down the middle to create two long rectangles. Cut each rectangle into squares so you have 4 squares. Finally, cut each square into 4 smaller squares. You should have 16 squares of cake.

  • Spread your jam on all faces of each square, then dip them into a bowl filled with coconut until they are well covered. Dig in!!
