TOMATOES Are The ‘T’ In BLT!

July is the bountiful harvest month of tomatoes.

They’re being collected from fields, container gardens, and even windowsills, and there are countless ways to utilize this delectable fruit that we won’t recall from season to season?

My mother and I once rented out 2 full acres of our 12-acre land near the West River in Maryland.

A farmer across the street was thrilled to utilize 10 acres of our land solely to cultivate produce he would sell at his roadside Farmers’ Market.

His 150 acres were designated for raising animal feed.

In one segment of our field, our friendly neighbor cultivated tomatoes; rows upon rows of tomatoes!

It never appeared as though he watered them, or nurtured them in any manner. Just scorching sunshine throughout summer until late July when the field was aglow in the hue of red!

However, a fantastic pizza commences with a Homemade Bread Dough. Bread dough is straightforward to prepare, rises in approximately an hour, allowing time to prepare the toppings you desire.

I will admit that when the depths of winter arrive, and I eagerly anticipate July and the vivid hues of tomatoes, the dish I crave the most is a BLT!

Perhaps it’s the dripping juiciness of the tomato contrasted with the crunchy, salty bacon; regardless, in February, I yearn for the BLT OF JULY!

This delectable BLT pizza is my preferred method to enjoy all the aspects I adore about a BLT sandwich, only on an exquisite homemade pizza crust.

To enhance this pizza’s flavor even more, since clearly I’m not slathering mayo on it (as I do my BLT sandwich), I toss the spinach in a balsamic, garlic, olive oil dressing instead.

There are three straightforward steps to preparing this pizza, so let’s begin!

  • Homemade Pizza dough – requires an hour to rise in a warm area, which gives time to cook the bacon and marinate the spinach.
  • Marinate the spinach – using a blend of balsamic vinegar, garlic, and olive oil.
  • Prepare the bacon and slice the tomatoes.

Ingredients Needed

  • Flour
  • Water
  • Yeast
  • Salt and Pepper
  • Hard cheese – sheep milk cheese
  • Fresh spinach
  • Balsamic vinegar
  • Garlic
  • Olive oil
  • Tomatoes
  • Bacon

Pizza Dough

Required Equipment

  • 2 sizable mixing bowls
  • Slotted spoon
  • Plastic wrap or a kitchen towel – to cover the dough while it rises
  • Wooden spoon
  • Rolling pin
  • Pizza pan or baking sheet
  • Cutting board
  • Chopping knife
  • Garlic press
  • Sauté pan – to cook the bacon
  • Oven
  • 3-4 cups Flour extra for dusting
  • 1 1/2 cups Water
  • 2 tsp Yeast
  • 1 tbsp Salt
  • 1/4 cup Grated hard cheese for the dough
  • 2-3 cups Fresh Spinach roughly chopped
  • 1 tbsp Balsamic vinegar
  • 1 Garlic clove crushed
  • 1 tsp Salt
  • 2 tbsp Olive oil
  • 2-3 Ripe Tomatoes
  • 1 lb Bacon
  • 4 oz Pecorino Cheese grated
  • Salt and pepper to taste
  • Dough – Begin by pouring water into a large mixing bowl. Sprinkle the yeast and sugar on top. Allow it to sit for 5 minutes to create a foam.

  • Add salt and a bit of flour, then stir. Gradually incorporate flour, stirring until it becomes increasingly challenging to mix. Using your hands, begin pressing in the newly added flour into the dough, flipping it over, sprinkling more as necessary until the dough is no longer tacky.
  • Transfer the dough to a clean, lightly greased bowl, cover it, and let it sit in a warm (not hot) location until it doubles in volume, approximately one hour.

  • Preheat the oven to 400. Roll out the dough on a floured surface and position it on the pizza pan. Brush it with 1 tablespoon of olive oil.
  • Spinach – In a large mixing bowl, combine spinach, vinegar, garlic, 1 teaspoon of salt, and 1 tablespoon of olive oil. Allow it to stand at room temperature to marinate.

  • Bacon – Cook the bacon, either in long strips to cut afterward or chop it before cooking. Drain excess fat and let it cool.

  • Tomatoes – Slice the tomatoes and have them ready to place atop the pizza.

  • Put the pizza dough into the oven for 10 minutes to initiate the baking process.

  • Quickly remove it and layer on the spinach, followed by tomatoes, topped with bacon, salt, and pepper, as well as cheese. Brush the crust with olive oil once more and continue baking for another 10 – 12 minutes or until the crust appears golden.
