Summer Garden Vegetable Bake (Easy Zucchini & Tomato Gratin)
A stunning summer garden vegetable casserole prepared with zucchini, yellow squash, tomatoes, and aromatic basil. Thinly cut and baked with lemon, olive oil, garlic, and cheese, an effortless, sophisticated approach to utilize garden surplus.
The Wealth of a Summer Garden
There is a point in summer when the garden ceases to request and begins providing.
Zucchini appear overnight, yellow squash gleam like tiny lanterns under broad leaves, tomatoes mellow in the sunlight until they nearly tumble into your grasp. Basil grazes your fingers as you stroll by, releasing its fragrance without prompting.
And all at once, there is an abundance.
This is the sort of dish that softly embraces that moment. Not complex, not heavy, merely a calm arrangement of what’s already lovely. Thin cuts laid out like petals, a splash of lemon and olive oil, a sprinkle of cheese. Into the oven it slides, where everything softens just enough to transform into something to be shared.
It’s not so much a recipe, but rather a method to gather summer into a singular creation.
What Is A Summer Garden Vegetable Casserole?
A summer garden vegetable casserole is a straightforward oven-roasted dish crafted with fresh seasonal produce like zucchini, yellow squash, tomatoes, and herbs. In contrast to classic ratatouille, this variant emphasizes thin slicing and layering for both texture and display, resulting in a visually captivating dish that cooks evenly and swiftly.
The outcome is tender vegetables, gently caramelized edges, and juices that blend with olive oil, garlic, and melted cheese.
Ingredients for a Summer Garden Vegetable Casserole and Their Purpose
- Zucchini (green) – Mild, delicate, and ideal for baking. Thin cuts cook swiftly and absorb flavor while retaining form.
- Yellow squash – Slightly sweeter than zucchini, providing color variety and balance to the dish.
- Fresh tomatoes – Release natural liquids during cooking, resulting in a light sauce without the need for cream or broth.
- Bell peppers (optional but suggested) – Contribute sweetness and depth. They also create an appealing base when used as a vessel.
- Fresh basil – Adds brightness and a classic Mediterranean taste that complements lemon and garlic flavors.
- Olive oil (extra virgin) – Aids in roasting vegetables instead of letting them dry out, adding richness and heart-healthy fats.
- Fresh garlic – Enriches the dish with savory complexity as it melds into the oil and vegetable juices. Utilizing previously roasted garlic rather than fresh introduces a deeper, nutty flavor.

My Summer Garden Healthy Lifestyle
It may not come as a surprise to those of you who frequently share this space with me, how much I adore cultivating as many ingredients as I can cook with. So much so, I was inspired to release a recent cookbook – Dirt To Dish, featuring over a hundred recipes from my gardens along with tips on how to cultivate many of my beloved cooking ingredients.
Another delightful occurrence in my kitchen frequently is Homemade Pasta, which pairs beautifully with freshly harvested vegetables and herbs, along with Homemade Bread, also a charming bake to complement my summer garden.

If you cultivate no other herb during the summer, do give basil a try. It flourishes abundantly in large containers and creates the best pesto sauce for salads, spreads, or a drizzle over the vegetables before baking.
And if you prepare too much pesto, it is decadently scrumptious rolled into homemade bread dough and baked into Pesto Buns, the perfect size to accompany this summer garden vegetable bake.
What To Do With An Abundance Of Garden Vegetables
Every gardener has experienced this; enthusiastic in spring while planting the garden, then come late July we are faced with a bountiful harvest that needs recipes promptly. My go-to solution is often to transform the harvest into a Ratatouille Pizza, because, why not!
All the veggies fit into a neat arrangement across a homemade pizza dough, then either frozen for a rainy day in fall or baked and enjoyed right away.
What Accompaniments to Pair With A Summer Garden Vegetable Bake
This vegetable bake is truly delightful when enjoyed alone with a crusty loaf of bread; however, we could effortlessly present a Fish Enveloped in a Fig Leaf, also sourced from our garden, or swiftly pan-seared Lamb Chops that can be prepared in 15 minutes.
One of the primary advantages of preparing the bounty of a summer garden harvest in this manner is that every individual serving is presented attractively, instead of from a large pot or casserole dish that appears messy after the initial serving. Furthermore, you can arrange them according to your guests’ dietary preferences, using a non-dairy cheese in some portions while excluding tomatoes in others; considerate servings.
