Why might this be? Perhaps because it transports us to Italy, even if just for a fleeting moment!

Over the years, pizza crusts have undergone significant transformations.

Cauliflower pizza crust has made it feasible for me to prepare pizza for even my Keto family members.

Truly, a cauliflower crust, baked to a delightful crisp, is quite impressive.

As for my partner and me, we both still enjoy a carbohydrate-rich, doughy crust for our pizza.

My partner favors his wheat dough while I lean towards a spelt dough.

My partner adores bacon on his pizza, whilst I prefer a meatball that has vegetables concealed within, something I devised for my grandchildren as a healthier meatball.

Nonetheless, on the two styles of pizza, they both feature a wonderfully nutritious blend of spinach walnut pesto, brimming with nutrients and taste.

Fortunately, I have fine-tuned both varieties of dough so that each can be prepared in mere minutes.

The spelt dough may require longer rising times, so I simply prepare it using potato water.

Water, in which I have boiled potatoes for another recipe, contains the ideal quantity of starch to ensure the dough rises quickly.

The same method works wonderfully when employing gluten-free flour.

Both varieties of homemade pizza dough rise within about an hour, allowing ample time to prepare the pesto, ready your proteins, and be set for an enjoyable pizza dinner.

Store-bought pizza dough or pre-made cauliflower pizza crusts make excellent choices for hectic weeknights.

You and I are both aware that the little ones will scrutinize ‘that green substance’ on their pizza. Pesto can be effortlessly concealed and camouflaged by cheese and personal likes for meats, such as bacon, meatballs, or sausage.

Venison meatballs are my top choice for a topping on my spelt pizza base.

In recent times, I’m discovering ground venison at most supermarkets, typically found next to the bison or lamb.

I prepare them in the same manner as my Grandma’s Disguised Meatballs, with vegetables incorporated inside.

Both pizzas are smothered in cheese, melted to perfection, and delightful.

Flowers On My Pizza?

Throughout the summer season, I cultivate numerous edible blooms.

Don’t wrinkle your nose, LOL!

Edible flowers provide many of the nutrients that herbs offer.

Flowers are often considered herbs, just more vibrant!

For the pesto pizza prepared here in two varieties, both include meat, although you can certainly skip it entirely and top with lovely nasturtium blooms!

Nasturtium flowers have a flavor similar to radishes or watercress, which complements the pesto perfectly.

How To Prepare Spinach Pesto Pizza Two Ways

To start, you’ll want to craft the Spinach Walnut Pesto.

This pesto is simple to create, ready in under 15 minutes, and freezes flawlessly for whenever you need it.

Saute Spinach and Walnut Pesto

Next, you need to either prepare the Spelt Dough and/or Wheat Dough, or purchase a pizza dough.

Pizza Dough Rolled

Trader Joe’s (no, I don’t collaborate with them) has both whole wheat and standard pizza dough available in the refrigerator section.

You will employ it precisely as the instructions will outline in my recipe.

Finally, the dough is rolled out, pesto applied on top, oven preheated to 400, any additional toppings added on top, and the pizza bakes for 18 minutes!

  • 2 Pizza pans – my preferred choice is below

  • Rolling pin
  • Frying pan
  • Cutting board
  • Chopping knife
  • Basting brush
  • Stovetop or burner
  • Oven
  • 2 Large Pizza pans

  • Rolling Pin

  • 16 oz Spelt or whole grain pizza dough homemade or purchased
  • 16 oz Universal Flour Pizza dough homemade or purchased
  • 1/4 cup Flour for dusting
  • 8 oz Spinach Walnut Pesto homemade
  • 12 oz Mozzarella cheese
  • 1/4 cup Olive oil
  • 1/2 cup Bacon
  • 12 Cooked meatballs stealth meatballs – vegetables and meat
  • 1 cup Fresh spinach finely chopped
  • 12 Nasturtium blossoms optional
  • Divide the bacon in half and sauté on the stove just until the edges start to brown without becoming crisp. Allow to cool.

  • Preheat the oven to 400 degrees.

  • Shape each dough on a floured surface and place onto the pizza pans.

  • Apply a small amount of olive oil around the edges of the crust. Bake in the oven for 10 minutes, then take out.
  • Distribute the spinach walnut pesto over both pizzas. Add a bit of fresh spinach on top. Layer the bacon on one and meatballs on the other. Arrange the sliced cheese on top. Return to the oven for 7- 8 minutes.
  • Add the Nasturtium blossoms on top, if desired, slice and serve.

Two distinct pizza crusts and toppings with the same nutritious pesto spread across both will comfortably serve 4-6 eager pizza enthusiasts.
