For those of us who appreciate salmon, we recognize it as a ‘standalone’ fish loaded with richness and abundant flavor. So why incorporate other exotic tastes into it?
Simply because it is a fish that enjoys the company of diverse flavors while still highlighting its exquisite taste. After all, there are numerous kinds of fish cakes we adore, so why not a rich, flavorful salmon!
What Constitutes A Croquette?
In two phrases? Fried Spheres! Otherwise, it varies based on where the croquette is prepared. In essence, a croquette frequently utilizes leftovers and miscellaneous items from the fridge, shaped into a compact form held together with a binder and fried.
A croquette is a compact, shaped mixture, typically consisting of mashed or finely chopped components that are breaded and fried until crispy on the outside and tender within. At its essence, a croquette is comfort food with sophistication.
Conventionally, croquettes are crafted by blending a primary ingredient (such as fish or meat, vegetables, or cheese) with a binder, such as potatoes, béchamel sauce (butter, flour, and cream), egg, or simply breadcrumbs.
A Brief Croquette Culinary History
Croquettes originated in France (from croquer, meaning “to crunch”) and served as a clever method to transform leftovers into something refined. Over the years, nearly every cuisine has created its version, think Spanish croquetas, Southern salmon fritters, or Italian rice croquettes.
The inspiration behind my salmon fritters was more of Japanese origin called Korokke, adapted from the French and typically coated in panko breadcrumbs and deep-fried until extremely crispy. Instead, I preferred mine gently sautéed for a crisp texture without immersing them in scalding oil. However, I did embrace the Japanese influence of ginger, five-spice warmth, and rice breadcrumbs.

Where I hail from, crabs are renowned worldwide, particularly from the waters of the Chesapeake Bay, where I reside, and where my brother-in-law is a fourth-generation waterman. Our family continually seeks out wonderful seafood recipes.
Marylanders create everything conceivable with our succulent blue crabs. Crab cakes and appetizer-sized crab fritters are packed with crab meat and a bit of egg as the binder.
Crab fritters are frequently served with a ketchup/horseradish dip. While every region boasts a fantastic seafood that creates a delightful croquette, octopus as well as shrimp also make wonderful fritters.

For the chili, small red chilies with a moderate level of heat work best. Simply finely chop one small chili and allow it to steep in a cup of honey while preparing the meal, or ahead of time.
When you’re set to serve, just remove the chili and seeds from the honey. Any leftover chili honey can be utilized in other recipes.
Cultivate Your Own Chili For Cooking
You’ll be astonished at how straightforward it is to grow a small pot of chilies indoors. Placed on a warm sunny windowsill, the small varieties require minimal care.
They might take around three months to start yielding chilies, but once they do, you can store plenty in the freezer.
I now have so many chilies in my freezer that I give away the new ones I harvest; however, I truly enjoy growing them.

This time, our mystery ingredient was 5-Spice.
Wanting to enhance the taste of salmon to something a tad more exotic, I observed that the five-spice would undoubtedly complement the salmon.
Having utilized five-spice, a mixture of star anise, cloves, cinnamon, peppercorns, and fennel seeds, in lamb recipes, I was curious to see how salmon would hold up against the strong flavors.
The combination of fish and spice was an excellent choice! The books, one a novel and the other a Chinese seafood cookbook, were quite inspiring.
Thus… This salmon croquette with chili honey was crafted by me, and now I am sharing it with you!

Fresh Salmon vs Smoked Salmon
Essentially, smoked salmon is freshly captured salmon that is salted and smoked in a method that preserves it for an extended duration.
Certainly, flavor is the reason one may favor one over the other. I frequently utilize smoked salmon as a substitute for bacon in various recipes, particularly for those who avoid pork.
However, there is an important thing to be aware of regarding smoked salmon, notably if you are pregnant or have delicate intestines.
Cold-smoked salmon is not fully cooked, potentially carrying risks for foodborne illness.
The positive aspect is that you can easily replace fresh salmon in this recipe with smoked salmon as it ultimately gets cooked!

- Citrus squeezer – Extracts fresh lime juice effortlessly and cleanly to enhance the salmon mix.
- Zester – Ideal for incorporating a trace of lime zest to amplify fragrance and taste.
- Cooktop – Necessary for frying and finishing the croquettes with the chili honey glaze.
Required Ingredients
- Fresh salmon – The main attraction. Tender, luscious, and packed with flavor, salmon forms the ideal base for croquettes that remain moist within while achieving a crispy exterior.
- Egg white – Serves as a binder, helping the croquette mixture stay together, providing structure without weighing down the overall texture.
- Ginger – Introduces warmth and a touch of spice, livening up the salmon with aromatic brightness.
- Lime – Adds acidity to counterbalance the richness of the fish, ensuring each bite remains light and vibrant.
- Garlic – Contributes savory richness that complements both the salmon and the sweet-spicy drizzle.
- Five-spice powder – A fragrant mix that introduces subtle complexity and an unexpected flair, transforming the croquettes from ordinary to unforgettable.
- Honey – Sweet, smooth, and indulgent, it forms the base for the chili honey glaze that completes the croquettes.
- Chili pepper – Imparts heat that harmonizes beautifully with the honey’s sweetness, resulting in that enticing sweet-spicy taste.
- Cooking oil – For gently frying the croquettes to a golden crisp, sealing in flavor and texture.
- Rice breadcrumbs – A light, crispy crust providing a delicate crunch without heaviness.
- Seafood seasoning – Amplifies the natural flavor of salmon and rounds out the spices for a well-balanced, flavorful bite.
- 2 cups Raw Salmon fillets approximately 2
- 1 Egg white
- 1 tbsp Fresh ginger grated
- 1/2 tsp Lime zest
- 1 tbsp Lime juice
- 1 Clove of garlic crushed
- 1/2 tsp Sea salt to taste
- 1 tsp Five-spice
- 1 Chili pepper

- 2 tbsp Nectar my selection
- 1/2 cup Rice flour
- 1 tsp Marine spice blend
- 1/8 cup Frying oil

Take off the skin from the salmon and coarsely chop it.

Place the salmon, egg white, ginger, lime juice and zest, garlic, salt, and five-spice into a food processor. Blend until it creates a paste.

Incorporate the marine spice blend into the rice flour and mix, then set aside.

Shape the salmon mixture into small spheres, 16 small or 8 large. Coat each sphere in the spiced rice flour. Reserve until ready for frying.

Finely mince the chili pepper and mix it into the nectar to infuse the heat of the chili into the nectar. Set aside.

Preheat the oven to 325

When prepared to fry the croquettes, warm the oil in a cast iron skillet or oven-safe frying pan over medium-high heat.

Cook the spheres, turning them, until they are crispy on the exterior, ensuring not to overly brown the delicate rice flour.

Place the skillet in the oven to allow the internal temperature to finish cooking, approximately 10 minutes.

Present with a drizzle of chili nectar on top or serve alongside as a dipping sauce.
