- Thaw one sheet of frozen puff pastry.
- Slice the pastry sheet into rectangles.
- Brush a little egg wash on each rectangle.

- Return the pastries to the air fryer basket and crack an egg into each well.

- Air fry again, cooking until the egg white is set and yolk is cooked to your preference. I prefer mine with the white fully set, yet the yolk still runny enough to flow onto the pastry shell.
- Serve seasoned with salt and pepper and garnished with green onions and/or chopped herbs as desired.

With the defrosted puff pastry sheet remaining folded, slice in half. Unfold and divide each piece into 3 by cutting along the crease to create 6 rectangles.

In a small bowl, beat 1 of the eggs with a teaspoon of water. Apply the egg mixture over the top of each pastry rectangle.

Arrange as many pastry rectangles in your Air Fryer as the size allows. I can accommodate two. Avoid overcrowding.

Prepare at 380°F for
12 minutes, or until a golden hue appears. Take out and repeat the procedure until all pastries are prepared. Allow to rest for a few moments.

With a sharp blade, slice a second rectangle within the pastry (you intend to outline a rectangle through the upper layers of the pastry, keeping the base layer whole–essentially forming a well for the egg). Use your fingers to press the center of the pastry (the section within the rectangle you just created) down into the pastry to form a well.

Reposition the pastry back into the air fryer. Crack an egg into each well.

Add shredded cheese and bacon on top.

Cook once more at 380°F for 5 minutes, or until the egg white is fully cooked and the yolk is done to your preference. Personally, I prefer the white to be completely set and the yolk to remain slightly runny.

Present seasoned with salt and pepper, garnished with chopped green onion and fresh herbs if desired.
