Velvety and airy mashed potatoes created in an Instant Pot. It’s straightforward, rapid, and effortless; it requires 20 minutes from beginning to end to prepare this ideal accompaniment to your roast meals or festive gatherings.
This was one of the initial recipes I explored in my Instant Pot, and there’s a good rationale behind it. It’s remarkably simple and nearly foolproof, whether you chop the potatoes or cook them entire. The outcome is fabulous every single time.
I’m quite fond of a delightful, airy mash, and I prepare it frequently. Occasionally, I keep it plain; other times, I indulge like in my creamy garlic variation. That said, a light, homemade version is unrivaled.
This Instant Pot recipe doesn’t incorporate cream. For those who favor a more decadent option, I have that available as well.
What you will require
Potatoes: I utilized King Edward potatoes, which are similar to Yukon gold or Russet varieties. These are among the finest potatoes for mashing. Whatever variety you select, make sure it’s a floury, starchy type.
Low-sodium chicken broth: I decided to experiment with this recipe, so I used broth instead of water. I believe I am now a fan.
Unsalted butter: Ensure you don’t compromise on the quality of butter. Believe me, you’ll be grateful.
Garlic cloves
Salt and black pepper: according to preference
Milk: Whole milk or half and half
How to prepare Instant Pot mashed potatoes
Peel the potatoes and chop them into large pieces. Alternatively, you may opt to leave the potatoes whole. Rinse them under cold water.
Place the potatoes and garlic in the Instant Pot, covering them with 1 cup of low-sodium chicken broth. Season with salt and secure the pressure cooker’s lid. Adjust the valve to the sealing position. Cook on manual high pressure for 8 minutes, then carefully perform a quick release. Meanwhile, heat the milk in the microwave.
Incorporate butter into the potatoes, followed by the warmed milk. Using a potato masher, mash the potatoes in the Instant Pot until you achieve your preferred consistency and texture. Taste for salt and adjust as needed; feel free to add some freshly ground pepper if desired.

Variations
Creamy garlic mashed potatoes: Go all out with the addition of double cream, sour cream, fresh garlic, cream cheese, and parmesan cheese.
Cheesy mashed potatoes: incorporate some melting cheese like cheddar, Monterey jack, or any cheese of your choice.
Roasted garlic mashed potatoes: Include roasted garlic for a subtle garlicky flavor.

Mashed potatoes are a remarkable and appetizing side for every roast dinner. Pair it with braised beef in red wine, roasted chicken, or honey garlic pork chops, along with a selection of vegetables like these brown sugar glazed carrots.
