Not in the slightest. There isn’t truly an authentic chicken Rogan Josh recipe.
There’s no red meat, no Kashmiri chilli, and no tomatoes. There are red chilli puree and tomato puree.
However, this chicken Rogan Josh recipe is delicious, chicken curry recipes are fantastic, and we adore it!

Cinnamon– I opt for a stick, but if you don’t have these, replace it with a dash of ground cinnamon.

Natural Yoghurt– Opt for full-fat, as it is far less likely to split when added to warm liquids.

It is a zesty meal, but chicken Rogan Josh isn’t excessively hot. It’s an approachable curry for families.
If you wish to enhance the spice, consider adding more chilli; use less for a gentler dish.
Can You Use Chicken Thighs?
Skinless boneless chicken thighs are excellent in curry and can be included in this Rogan Josh with chicken.
Can You Include Extras to Expand it?
This recipe accommodates four individuals.
If you aim to prepare more, consider adding additional chicken breasts or perhaps a can of chickpeas, along with some extra water or a can of diced tomatoes to your sauce.
How to Prepare Chicken Rogan Josh – Step-by-Step Guide
You can find the complete recipe and measurements in the recipe card at the end of this post, but here are some step-by-step directions, images, and detailed suggestions for crafting this uncomplicated chicken Rogan Josh Recipe.
Step one
Cut the chicken into bite-sized pieces.
Step Two
Combine in a container with the garlic, ginger, and red pepper purees, mixing well until the chicken is evenly coated, then cover and refrigerate for about an hour.
You may marinate for longer, though it’s not essential.
Step Three
Peel the onions and slice them into eighths.
Step Four
Put them in a deep bowl with a generous splash of water and use a blender, food processor, or stick blender to blend into a puree.
I prefer using a stick blender.

I use my cast-iron Dutch Oven, but a large frying pan with a lid would work fine as well.

Take it out of the pan and set aside.

In the same pan, warm the sesame oil.
Step Nine
Incorporate the cardamom and cinnamon stick and sauté for a minute, stirring constantly.

Add the pureed onions along with a pinch of salt and bring to a gentle simmer.
Allow it to simmer for 5 minutes, stirring regularly.
Step Eleven
Mix in the cloves, cumin, coriander, paprika, and bay until the color is uniform.

Pour in the stock and introduce the tomato puree. Bring to a simmer, stirring occasionally.
Step Fourteen
Cover and cook for about an hour, lifting the lid to stir and scrape the bottom from time to time.

Remove the lid and mix in the yoghurt along with a pinch of ground black pepper.
Stir and simmer for an additional 15 minutes, occasionally stirring.
If your sauce remains quite watery, simmer for longer until it thickens. If it appears to be drying out, add more water or stock.

I enjoy a big family curry gathering, so we generally have naan bread, poppadoms, dips, and boiled or pilau rice on our table.
