Ingredients For Chicken and Halloumi Burgers

Burger Rolls– You have the option to create your own easy buns, but store-bought are acceptable.
Chicken Breasts
Olive Oil– Other cooking oils work as well.
Peri Peri Seasoning– Either made at home or purchased.
Halloumi Cheese

Lettuce and onion for serving.
You can also add a hint of chili flakes if you want your burgers to be extra spicy, but this is optional. I don’t introduce salt and pepper anywhere. Halloumi is inherently salty.

How to Prepare Chicken and Halloumi – Step-by-Step Instructions

Step One
Wrap the chicken breasts gently in cling film or position them between two sheets of baking paper.
Step Two
Bash or roll with a rolling pin. They don’t need to be exceptionally flat or thin. Just flatten them a bit so that they are easier to consume and cook more quickly.
Step Three
Warm a little oil in a large, non-stick pan over
medium warmth.
Step Four
Incorporate the chicken breasts and drizzle with a tablespoon of oil. Dust with one tablespoon of peri-peri seasoning.
Step Five
Sear for 5-10 minutes on either side until the chicken is thoroughly heated and fully cooked. Add the remaining peri-peri to the bottom when flipping.
The duration this will require depends on the thickness of your chicken. I suggest slicing the largest breast in half to ensure they are cooked completely. Alternatively, use a meat thermometer.
Step Six
Whilst your chicken is being prepared, grill the sliced halloumi over medium warmth for 3-5 minutes on each side until they are golden brown. You may sprinkle with chilli flakes for added heat, although this is not necessary.
Remove and set aside on a plate until needed.
You could also use an air fryer if available.
Step Seven
Generously spread the rolls with sweet chilli mayo.
Step Eight
Place a cooked chicken breast and two slices of halloumi within each roll.
Step Nine
Garnish with lettuce, onion, and any other preferred salad before topping with the upper half of the bread roll.

My essential advice for perfect halloumi and chicken burgers is:
- Ensure your pan is adequately heated so that the chicken won’t adhere.
- If timing proves challenging, cook the halloumi beforehand using the same pan for the chicken. This way, you can monitor everything as it cooks.
- Add ample sweet chilli mayo.
- Take your time. If uncertain, extend the cooking time for the chicken and slice it in half to confirm it’s fully cooked.
- Don’t concern yourself with hitting the breasts too firmly. They won’t be damaged.
- Make sure to wrap the raw breasts loosely, allowing them space to expand while you press them.

I pair my chicken halloumi burgers with potato wedges and corn on the cob.
Other suggestions include coleslaw, spicy rice, sweet potato wedges, fries, and salad. Essentially, anything typically served with a burger works well.

Chilli Flakes
I occasionally add some chilli to my halloumi or sweet chilli mayo.
However, this is entirely optional.

Pineapple
I enjoy a pineapple ring accompanying chicken and halloumi. Grill or fry it for a minute or two on each side to warm before adding to the halloumi.
Sauces
I adore sweet chilli mayo. However, using just sweet chilli or just mayo would also be sufficient.
Feel free to try combinations or even add something like hummus.
Leftovers
If you have any extra chicken breasts or halloumi, you can reheat them the following day.
To warm in the oven, arrange the chicken breasts on a baking tray, cover loosely with foil, and bake at 180 degrees C (fan-assisted) for 10-15 minutes, until steaming hot throughout.
You can also heat in the microwave.
Include the halloumi during the last few minutes.
