Conventionally, it is prepared by boiling cauliflower and then cloaking it in a rich, creamy cheese sauce before baking it in the oven.

Nevertheless, with the air fryer, the cauliflower is first roasted for an excellent texture and then coated in the creamy cheese white sauce before ultimately cooking in the air fryer to achieve that bubbling and crispy golden topping. Broccoli stem: this is optional but delightful. I only included it because I had some leftover from a prior recipe (smashed broccoli). A fantastic approach to minimize food waste!

Cheddar cheese

Mozzarella cheese

Olive oil

Milk

Unsalted butter

All-purpose flour

Whole grain mustard: for a touch of tang and flavor richness.

Garlic granules

Nutmeg

How to prepare cauliflower cheese

Chop the cauliflower into florets, wash thoroughly, drain, and pat dry with a paper towel or allow it to air dry, then place in a bowl.

Drizzle the cauliflower florets (and chopped broccoli stem if added) with olive oil, sprinkle with salt and pepper, then toss to mix well.

Transfer to a preheated air fryer basket and cook at 380F / 190C for 8-10 minutes. While the cauliflower is cooking, make the cheese sauce.

In a saucepan, melt butter over medium heat. Once melted, add the flour and stir until it turns into a smooth paste, about 2-3 minutes (to cook out the raw flour taste). Gradually add the milk, whisking continuously to prevent lumps from forming.

Stir in garlic granules, nutmeg, and whole grain mustard, then season with salt and black pepper according to your preference.

Incorporate the cheese, setting aside some for topping later. Stir until the cheese is melted and the sauce is smooth and thick enough to coat a spoon. Then, remove from heat.

Once the cauliflower finishes cooking in the air fryer, transfer it to a baking dish and drizzle the cheese sauce over it. Toss to ensure all florets are well coated with the sauce, and sprinkle the reserved cheese on top. Carefully position the cauliflower in the air fryer basket and cook for 10-12 minutes until the cheese is bubbling and golden.
