I previously posted a pressure cooker rice and chicken recipe on the blog, but it uses boneless, skinless chicken thighs. In today’s recipe, I will guide you on how to perfectly prepare bone-in chicken thighs with rice in your instant pot without the rice becoming mushy or the chicken overcooked.
You may also utilize chicken legs for this dish. Chicken legs or quarters comprise both thighs and drumsticks.
If you adhere to this recipe precisely, you won’t encounter the dreaded BURN alert. It’s a significant claim, but it is true, which is why I created a video to demonstrate how effortless it is. I won’t deny I’ve had my share of BURN alerts using my 6qt Instant pot Duo, but one thing I didn’t do is panic.
I simply believe that the new instant pot has its quirks and sometimes is not fond of tomatoes. Hence, this recipe does not include tomatoes, so there’s no reason to worry.

How to prevent instant pot burn warnings on rice recipes
A key to preparing a perfect meal in the instant pot without experiencing BURN phobia is to ensure you deglaze the pot thoroughly. At times, you might even need to wash the pot before continuing the cooking process or allow the pot to cool slightly.
Not every BURN alert necessitates a panic response; sometimes, we just need to relax and see how things unfold.
If you’re cooking rice in your instant pot and receive a burn alert midway through the cooking process, simply switch it off and let it release its pressure naturally. You can be confident that the rice will turn out fluffy and well-cooked.
Note: only apply this method with rice dishes not paired with other proteins like chicken or beef.
Essential items to prepare this recipe
To concoct this straightforward instant pot rice and chicken recipe, you will require the following ingredients:
Skinless bone-in chicken thighs: I purchased chicken thighs with skin and removed the skin myself.
Uncooked rice: I used golden Sella basmati rice which cooks similarly to long-grain rice. You can also opt for pure basmati rice for this dish. Soaking the rice before cooking is unnecessary.
Stock: I used chicken stock, but feel free to select any type of stock you prefer, such as beef or vegetable.
Herb de Provence: swap this with Italian seasoning or any preferred herbs.
Paprika
Ginger and garlic paste
Salt and black pepper
Onion
Butter
Vegetable oil
How to prepare instant pot chicken thighs and rice
Season the skinless chicken thighs with salt, black pepper, and smoked paprika. Mix to combine and set aside.
Activate the instant pot and select the Sauté function at normal heat. Sauté the onions in butter and vegetable oil until soft.
Incorporate the garlic and ginger paste, then add the seasoned chicken thighs to the pot and leave undisturbed to brown for 3 minutes. Flip the chicken over and brown for another 3 minutes.
Remove the chicken thighs from the pot and set them aside.
Pour 2 cups of broth into the pot and deglaze the bottom thoroughly. This step is essential to avoid receiving a BURN alert.
Add washed rice to the pot, include a cup of broth, and stir to combine. Sprinkle in herb de province, adjust salt to taste (optional), but do not stir again. Lay the chicken on the rice and securely cover the instant pot.
Select manual or pressure cook and cook on high pressure for 6 minutes. Once the cooking cycle ends, allow the pot to naturally release pressure for 10 minutes, then carefully perform a quick release.
Open the pot, add the chopped chives, and stir to combine. Let the rice sit covered for an additional minute or two. Fluff the rice and serve.
How to present
Serve this instant pot chicken thighs and rice as is or alongside a side of coleslaw, cucumber salad, or brown sugar-glazed carrots.
How to store
You can keep this dish in the refrigerator for up to 3 days. Ensure that it is completely cooled and store it in an airtight container.
