What Are Lemon Cucumbers?
After receiving a gift pack of lemon cucumber seeds, I initially believed it was merely a catchy name for a cucumber.
It quickly became clear that these vivid yellow ‘round’ cucumbers were much more than what their nomenclature suggested.
These robust cucumbers develop to resembles lemons or yellow tennis balls, yet they are juicier than ordinary cucumbers. Captivated from the very first one on the vine.
What Do Heirloom Lemon Cucumbers Taste Like?
Sweetness without sourness characterizes the flavor of lemon cucumbers. I’ll wager the name stems from their appearance.
The instant I sliced open my first lemon cucumber, freshly harvested from my vines, I realized these were indeed an heirloom variety.

Nothing else is included in the salad, solely these cucumbers paired with a few fresh herbs.

Required Equipment
- Chopping board for a streamlined workspace and simple cleanup.
- Slicing knife for precise thin cuts that will look appealing on the dish.
- Peeler to strip the thin skin from the lemon cucumbers.

- Lemon cucumber – I cultivated mine, starting from seeds, and they are incredibly easy to grow, even in a couple of deck pots.
- Lemon, both juice and zest, to create this refreshing dressing that pairs perfectly with the lemon cucumber.
- Garlic, crushed and put in the dressing jar to shake and pour just prior to serving.
- Extra virgin olive oil, a high-quality olive oil because its taste will shine through over the subtle flavor of the lemon cucumbers.
- Fresh herbs – basil and/or lemon verbena, although you may opt for other preferred types.
- Seasoning – salt and pepper according to your preference.

- 1-2 Lemon Cucumbers
- 1 Lemon
- 1 Garlic clove
- 1 tbsp Olive oil
- 2 tbsp Fresh herbs lemon verbena or basil
- Seasoning to taste

Carefully peel the lemon cucumber, similar to how you would an apple. Slice into delicate round pieces. Arrange on the plate designated for serving.

Thinly slice half of the lemon and intersperse it among the cucumber slices. Squeeze the leftover half of the lemon into a small container and mix with olive oil and crushed garlic clove.

Chop the herbs finely and set them aside. Drizzle the lemon mixture over the top of the cucumber slices. Add salt and pepper as desired. Top with the herbs and serve.
