There’s a certain enchantment that unfolds, a magic that demands focus when that ‘showstopper yolk’ cascades down the ingredients of… anything!

My son Omar Daumit, is a professional chef.

I can’t fathom why it took me so long to inquire him about how to ‘professionally’ poach an egg. Then one day, I finally did.

Once Omar demonstrated the technique as done in a restaurant kitchen, I stored away all the pots and tools I previously employed and solely poach eggs in this manner now. So effortless. So

The hidden ingredient?

Vinegar!

Just a small splash of vinegar in the simmering water aids in quick coagulation of the egg whites, keeping them steady with the yolk, creating a delicate surround of whites around the yolk. 

How To Impeccably Poach An Egg At Home

It’s so straightforward, I couldn’t help but chuckle at all the cash I’ve invested over the years on pans and tools that create poached eggs; typically only a handful at once. 

Let’s navigate through these simple steps, with one image (instead of a video), so you can picture what I am about to explain without needing to pause and play a video.

  • Wide Shallow Pan – at least 3-inches in depth
  • Slotted Metal Spoon
  • Small cups – ramekin, saucer, or any vessel that holds 1/4 cup
  • Parchment Paper
  • Plate
  • Stovetop or Burner

Preparation for Egg Poaching

  • Fill the pan with at least 3-inches deep of water, cover it, and bring it to a boil. 
  • Carefully crack each egg into separate small cups. Having the eggs prepared makes it simpler to add to the boiling water without losing track of time. 
  • Lay a piece of parchment paper on a plate to transfer the poached egg when ready to serve.

Poaching The Eggs

The actual poaching happens quickly, so have everything prepared!

  • Take off the lid and add the vinegar. Replace the lid momentarily to ensure the water stays boiling.

  • Remove the lid again and stir the water with the slotted spoon. While the water is swirling in a circle, gently drop in the eggs one at a time, softly moving the water with the spoon. (I usually pop the lid back on for a moment to ensure the temperature doesn’t lower below boiling, then take it off again once I’m certain it’s still gently boiling).

  • Set the timer for 3-minutes. (If you’re preparing multiple eggs and intend to reheat them, boil the eggs for only 2.5 minutes).

  • Using the slotted spoon, carefully lift the eggs with their little bundle of cloud whites and gently place them on the parchment paper lined plate, until you’re ready to serve them.

  • If you plan to make several and wish to reheat each egg before serving, simply place the 2.5 minutes cooked egg back into the boiling water for an additional half minute, then remove and serve.

  • 4 Fresh Eggs
  • 1 tbsp White vinegar
  • Water 4-inches deep in the pan

  • Bring the water to a boil with a lid on. Place each egg in an individual small cup.

  • Add the vinegar to the water once it boils and ensure it continues to boil, using the lid to cover as needed to maintain boiling temperature.

  • Utilize a slotted spoon, and whirl the water around like a miniature tornado. As the water twirls, softly introduce each egg, giving a delicate swirl to the liquid, carefully gathering the whites of each egg close to its yolk.

  • Boil for precisely 3 minutes, no longer. *Refer to notes. Extract with the slotted spoon and position on a dish until prepared to serve.

  • If you do not intend to present immediately, cook the egg for only 2.5 minutes, then take it out. When you are set to serve, gently return the eggs into the boiling water for merely 30 seconds to heat them, extract, and serve.
