As a result, I encountered a variety of herbs that were not commonly used in American culinary practices during the 60’s.

Not having extensive knowledge about many varieties, I stayed close to the two I was most acquainted with, French Thyme and Lemon Thyme.
I can confirm that these two flavors are fantastic in a range of my favored recipes.
And indeed, for some odd reason, I frequently depend on thyme to enhance my potatoes or mushrooms!
How To Collect And Dehydrate Thyme For Year-Round Recipes
Thyme appears to take its sweet time in developing once planted.
Suddenly, however, you find yourself with more thyme than you can handle.
What should you do with it?
Dehydrate it!
The simplest method to achieve this begins with harvesting a substantial amount of thyme before it starts to produce seeds (the small blooms on top).
Rinse, pat dry, and arrange the thyme stems on a baking sheet, then dry them in the lowest setting of your oven.
I set my oven to 175, place the herbs inside for around 15 minutes, turn off the oven, and let them sit inside for several hours.
Once thoroughly dried, simply crumble the dried leaves into a pile of dark green tiny pieces and store them in a glass jar with a cover.
Oh, and definitely, bundle the leftover stalks from the tough woody stems of the thyme, and save them for grilling or winter bonfires.
They possess fragrance and flavor as well.

- 6 cups Water

Collecting the thyme with the longest stems possible, without uprooting, provides ample flavor for cooking, and to infuse taste while grilling by utilizing the stems in the fire, once the leaves have been removed.

Submerge the thyme in water and rinse it multiple times. There is frequently sand and dirt present in the thyme.

Spread the rinsed thyme on towels to absorb excess moisture.

Preheat the oven to 175.Place a sheet of parchment paper on a large baking sheet, or use two if needed.

Distribute the thyme onto the prepared baking sheets. Insert into the oven for 10 minutes, then turn off the oven and let the thyme remain inside for several hours.

Take the thyme out of the oven and permit it to cool overnight.

The thyme should now be dry and crisp enough to strip all the leaves from the stems. Crush the dried leaves by hand.

Collect the stems stripped of leaves, and tie string around them to use in the grill for flavor while cooking or in the fireplace for aromatherapy.
If the thyme is not dry enough to be crisp and brittle to the touch, allow it to finish drying thoroughly; otherwise, any remaining moisture in the leaves will lead to mold developing in the glass container and spreading to the other leaves.
