There’s something profoundly special about how a family’s Thanksgiving flavors are preserved, transformed, shaped, and reinterpreted with each subsequent generation. My Grandma’s Homemade Turkey Stuffing embodies that treasured recipe. My Syrian mother, embracing American customs, aimed to craft her own recipe to personalize a uniquely American holiday.

She resolved to create the finest stuffing for the Thanksgiving turkey; a stuffing teeming with Mediterranean flavors.

A stuffing recipe combining sage, chestnuts and bagels, mingled with dark turkey meat, wrapped in white breast meat, became the family’s “Thanksgiving In One Bite.”

I have prepared this dish numerous times and knew that as long as I pounded the turkey breast, both the turkey and stuffing would be flawlessly cooked and timely.

I should have simply stopped there.

No… I ventured out and audaciously prepared a complete Thanksgiving feast, in just 90-minutes!

Let’s remember the essence of Thanksgiving. It’s a celebration for Americans, and America is largely composed of immigrants.

My mother was a first-generation Syrian, and like so many other immigrants, Thanksgiving provided an opportunity to infuse their unique heritage into the traditional Dinner.

When it came to the ‘traditional stuffing recipe’, my mom opted for her Mediterranean flavors and crafted this delightful stuffing recipe that my sisters and I cherished growing up.

So naturally, in this national television cooking contest, I aimed to honor my mother and present her turkey stuffing recipe.

Regardless of whether a remarkable stuffing formula is crafted for the Thanksgiving spread or in the midst of any month throughout the year, the variety of bread utilized makes a significant impact.

Believe me when I say, various kinds of bread result in a mediocre, poor, or exceptional stuffing.

The optimal bread to incorporate in a stuffing will vary based on whom you consult.

Some individuals will select a sourdough loaf, others a sturdy French bread, but my mother… she opted for a robust New York Jewish bagel, and she hails from Syria! LOL!

What Is Stuffing?

As for myself, I did not grow up with a casserole dish adorning our holiday table. I had to test various casserole options that I could be proud to present.

But bread? Absolutely, bread, divine homemade bread, white bread, spelt bread, potato bread, whatever kind you desire, I enjoy creating.

Stuffing is fundamentally any components you fancy that can be combined with a bread of your preference, and baked independently or within a certain type of meat.

I’ve heard of several families preparing cornbread stuffing, incorporating ground pork sausage, tucked inside their turkey.

Countless varieties of bread, numerous styles of stuffed turkey.

The judges on the program were completely astonished by my succulent turkey breast roll that enveloped my finest Thanksgiving stuffing, all within 90 minutes!

This dressing recipe comprised a blend of bread cubes from lightly toasted pieces of classic hard New York bagels.

Why? Because no other bread endures the drippings from the delectable turkey, melted butter, and the juices from the celery and onions without turning soggy.

The finest poultry seasoning, apart from salt, is freshly minced sage!

Fresh herbs possess a distinctive oil of their own, and my homegrown sage is exceptionally fragrant in this homemade stuffing recipe.

Next, I prepared turkey gravy, not a sweet potato casserole, remember I avoid casseroles, but rather roasted sweet potatoes and Brussels sprouts.

Yes, of course, cranberry my way, not the cranberry sauce you find in stores, but an elegant Cranberry Compote, sweetened with fresh grapes, along with a dash of chili pepper.

Had they allotted me just 30 minutes more, I would have prepared a Pumpkin Pie too!

Indeed! I advanced to the next round, the finale!

The Most Exciting Aspect Of Showcasing My Traditional Stuffing Recipe On Television Is That My Recipe Is Now Included In The PBS Cookbook!

Who would have imagined that while filming season 1 of The Great American Recipe, seasons 2 and now 3 would follow.

The enthusiastic reaction from an audience, capable of being entertained by various television programs, found the narratives, recipes, and customs of America’s diverse heritage to be their preferred choice of entertainment.

Now, numerous stories and recipes from our collection can be continually relished in the cookbook published by PBS after each season airs.

Reflecting on it, the only adjustment I would have made during this competition is omitting the Brussels sprouts, and instead of the green bean casserole, I would have opted for my favorite Festive Green Bean Bundles!

  • Ground Dark Turkey Meat – Incorporating dark turkey meat adds richness and complexity to the stuffing, mirroring the flavor of a well-roasted bird. It browns beautifully, imparting savory notes that unify the entire mixture.
  • Celery – These crunchy, aromatic stalks deliver the classic foundation of any excellent stuffing. Celery softens during cooking, emitting a subtle, almost sweet fragrance that harmonizes with the herbs.
  • Onion – Essential for flavor development, onion contributes warmth and a delicate sweetness. As it sauté, it transforms into the savory base that makes the whole kitchen smell like Thanksgiving.
  • Stale Bagels – The secret component! Sturdy bakery bagels withstand broth and butter without becoming mushy. Their chewy, robust texture provides the stuffing with substance and an enjoyable bite.
  • Salt and Pepper – Basic yet crucial. Salt amplifies every savory note while pepper introduces a mild heat that keeps the flavors vibrant.
  • Butter – Butter imparts comfort, richness, and that unmistakable festive aroma. It envelops the bagels and vegetables beautifully, binding everything in warm, toasted flavor.
  • Olive Oil – A splash of olive oil prevents the sautéed components from adhering and adds a subtle fruitiness that complements the herbs and chestnuts.
  • Fresh Sage – Nothing encapsulates Thanksgiving like sage. Its earthy, resinous scent permeates the stuffing, imparting that nostalgic, unmistakable holiday essence.
  • Fresh Parsley – Lively and fresh, parsley elevates the dish, preventing it from feeling heavy. It adds a splash of color and a crisp, herbal finish.
  • Roasted Chestnuts (optional) – For a hint of Old World warmth, roasted chestnuts contribute a soft, nutty sweetness. They’re optional, but they make the stuffing feel especially festive and a touch luxurious.

How To Prepare Grandma’s Homemade Turkey Stuffing

The process is straightforward, and once each ingredient has been sautéed in a large skillet to blend all the flavors and juices, the stuffing is then ready to:

  • Stuff into a large turkey for roasting.
  • Heat in a baking dish and serve as a side.
  • Roll into a deboned and butterflied turkey breast, tie, and roast, as I did in The Great American Recipe Episode 7, which secured my spot in the finale.

To begin, in a large sauté pan, heat butter and olive oil, then caramelize onions and celery along with fresh herbs.

Next, quickly sauté the dark turkey meat in the same pan with the onion mixture.

Finally, fold in the cubed bagel pieces and roasted chestnuts, and this delightful stuffing is prepared for whatever use you have in mind.

  • Large sauté pan with lid

  • Large slotted spoon

  • 1-2 lbs Ground Dark Turkey Meat
  • 4 Celery stalks

    minced finely

  • 1 Medium onion minced finely
  • 2 Stale Bagels
  • Salt and pepper to your preference
  • 4 tbsp Butter
  • 1 tbsp Olive oil
  • 1 Fresh Sage bundle chopped finely
  • 1 Fresh Parsley bundle chopped finely
  • 1/4 cup Roasted chestnuts (optional) chopped finely
  • In a spacious bowl, combine the celery, onions, chopped sage, and parsley leaves, then set aside. 

  • Using a sharp serrated knife on a cutting board, carefully slice the stale bagel into half-inch cubes, then set aside. A true bakery bagel has been boiled and subsequently baked, yielding a shiny hard outer layer and a dense interior, so take care while cutting. 
  • In a large skillet, cast iron skillet or Dutch oven, add the butter and olive oil to the pan. Introduce the onion mixture and cook to caramelize the onions and celery.
  • Shifting the onion mixture to the sides of the pan, add the ground meat in the center along with salt and pepper. While breaking the meat apart, sauté until any pinkness has disappeared. Incorporate the cubed bagel pieces and chestnuts, mixing until everything is well combined.
  • Switch off the heat, transfer this mixture to a bowl, and set aside.This mixture is now ready to be stuffed inside the bird for your roast turkey, baked in a dish, or rolled inside a deboned and butterflied turkey breast, which is what I did for this television segment.
